This fascinating article (most of the articles I find to post links to here ARE fascinating, so I’m not apologizing for using the word) sheds some insights into how, and perhaps why, our food today isn’t as healthy as it once was. It’s no surprise that our ‘sweet tooth’, which seems also a universal feature right across cultures, must take a lot of the blame. Specially interesting (to me anyway) was the mention of multi-coloured maize and blue potatoes. Not least because I have several times served blue potatoes to visitors for fun – only they weren’t especially healthy, in fact probably less so than normal, as the ‘blue’ was food colouring. Little did I know that i was mimicking an early and very nutritious variety!
